Blair Sawa is a teacher at St-Peter’s Catholic Secondary School who is involved in planning and maintaning the gardens at The Mount Community Centre. Blair loves to be involved in the community, as well as involving his students in the housekeeping of the gardens. He loves to support local and create recipes with ingredients that are grown locally around the community. Blair absolutely loves gardening, he calls it a “labour of love”!
Here is his famous Maple Rhubarb Mint Mojito Recipe!
Maple Rhubarb Mint Simple Syrup Ingredients :
- 4 cups of diced rhubarb
- 1 cup of water
- 3/4 cup of All Natural Red Mill Maple Syrup
- A bunch of mint
Simple Syrup Procedure :
Step 1 : Incorporate all ingredients in a medium-sized bowl
Step 2 : Bring to a boil and simmer for 20 minutes, then strain.
Step 3 : Allow to cool completly, the simple syrup is now ready for the cocktail.
Mojito Cocktail Ingredients :
- A few leaves of fresh mint
- 50ml of maple rhubarb mint simple syrup
- 60ml of lime juice
- 50ml of white rum
- A splash of club soda
- 1 stalk of rhubarb, for garnish
Mojito Cocktail Procedure :
Step 1 : Place a few leaves of fresh mint in the bottom of a rocks glass.
Step 2 : Muddle in the glass, then top with crushed ice.
Step 3 : Pour in the maple rhubarb mint simple syrup, lime juice and rum then top with a spash of club soda.
Step 4 : Use a vegetable peeler to peel one stalk of rhubarb into fine ribbons, curl into a spiral to shape the rhubarb then use as a garnish along with more mint and a few lime wedges.
*Note : Keep the simple syrup in a mason jar in the fridge for up to 2 weeks.
